Peanut Butter Chocolate Nice Cream
Nice cream: ice cream that is nice to you by being healthy!
Normally, I don’t try to make classic dessert-type recipes into a healthier version because they tend to leave you disappointed. But this one is so good I promise! You can have a big ol’ scoop of “ice cream” and not feel guilty about it!
There’s no cream involved in this recipe. No added sugar and it’s still delicious! I know, I still don’t understand it. Just trust me. Simple ingredients like bananas, cocoa powder and banana make it yummy and simple. My nice cream is also vegan and gluten free if that’s important to you!
When I think of dessert, I tend to crave a rich chocolatey flavor. And what goes better with chocolate than peanut butter? The recipe is simple and I use a food processor to thoroughly mix the ingredients. It makes it easier, but if you don’t have one you can use a blender or just mix with a whisk.
Once it’s been in the freezer for over an hour or two, you’ll need to throw it in the microwave for about 1 minute to soften it enough to eat. Enjoy your guilt-free treat!

- 2 bananas, sliced
- ¼ cup cocoa powder –where to get
- ¼ cup coconut oil, melted – where to get
- 3 Tbsp peanut butter
- ½ cup chocolate chips or cacao nibs – where to get
- Mix together the melted coconut oil and cocoa powder with a whisk.
- Add all ingredients to food processor and blend until smooth. Fold in chocolate chips.
- Transfer mixture to a pan, cover and freeze for at least 1 hour.
- Serve in a bowl or cone. Consistency is very similar to ice cream! Enjoy 🙂
Dessert Cocoa Balls with Protein Powder
DESSERT.
It’s a love / hate thing right? You’re in love with it but you know what all that sugar does to your body, your skin and your energy level.
Enter these little healthy dessert cocoa balls to get your sugar fix without all the guilt. I almost always crave a little something sweet after lunch or dinner. These little guys are perfect because they are full of healthy fat (almonds, coconut oil, chia seeds), protein (almonds and protein powder) and are sweetened naturally. I use Vega Protein Powder because it is a plant-based protein naturally sweetened with stevia (zero calorie and comes from the stevia plant). This protein powder is sweetened enough that I don’t add anymore sweetener to this recipe.

I throw a cocoa ball into my lunch box for a little sweet fix after lunch or in the afternoon when you start to get that sugar craving. It satisfies while keeping you on track.
This is yet another recipe where my mini food processor has come in handy! If you don’t have one, I highly recommend it! I’ve had mine for 8 years and it’s got plenty of life left in it! This is the one I use.
- ¼ cup cocoa powder
- 2 tablespoons chia seeds – where to get
- 1 cup raw almonds
- ½ cup chocolate protein powder – where to get
- 1 tsp cinnamon
- ¼ cup + 1 tablespoons coconut oil
- ½ cup unsweetened, finely shredded coconut
- Mini Food Processor – where to get
- Add the almonds to a food processor and pulse into fine crumbles, about 30 seconds (I love my mini food processor for recipes like this).
- Add the rest of the ingredients except for the coconut oil and shredded coconut. Pulse another 10 seconds until combined.
- Add half of the coconut oil and pulse 10 seconds. Continue to add in coconut oil until the consistency is wet but it’s still clumping together a bit.
- Sprinkle the shredded coconut onto a piece of parchment paper.
- Form little balls with the cocoa mixture and roll in shredded coconut.
- Put them in the fridge or freezer for 20 min to set. Store in a tupperware.
Healthy Protein Banana Bread
Mornings just got a little better.
Lately I’ve been really into banana bread. Maybe it’s the cool fall-like weather of the last couple days that’s got me in the baking mood. Honestly, I don’t bake a whole lot because baking recipes tend to be pretty unhealthy (also, I can devour a batch of chocolate chip cookies in one sitting). But I wanted to come up with a recipe for banana bread that is healthier than the typical ones and it wasn’t too difficult to do. What do I mean by healthier? Good question. By that I mean less grains or more nutritious grains, less sugar and more protein.
